Question on logging

How do you log EVERYTHING, right down to private messages. Months ago I thought I knew how, but that knowledge has escaped me since then...

Also whats the best editor to view the logs in? Every editor I use splits the line prematurely and makes it look messy.

By enabling all logging options in the server.ini (EDITED by Guldi: and also read the FAQ thread about logging)

I use cat+less for viewing the logs and cat+grep for searching for specific entries.
