And what about using a push-to-talk button on my joystick for TS on a client (via LAN)? Unfortunately I haven't found any solution so far (neither by using FSUIPC or other software). I doubt if TS is programmed for this kind of LAN control. Am I right?

ther's not direct support for joystick buttons as far as I know. You'd need a way to map your joystick button to a key and use that one in TS, I'd assume this shoudl work ?
