I want TeamSpeak to start automatically when I log in, but I don't want my mic to instantly be enabled. Is there a way that I can default to having the mic disabled, then I manually toggle it on when I want to?

You can choose to not use any capture profile on the bookmark you connect to. When you connected, you would then first have to select your capture profile using self -> capture profile once.
Probably not quite what you were looking for but it's close enough.
Another way would be to write a LUA Script that would mute your microphone on the server every time you connect.
