If you make a backup copy of ts3server.sqlitedb you are set.

Not a problem, if you bork your permissions or forgot your serveradmin password you can delete this file and start from scratch. If you forgot the password you can also follow http://forum.teamspeak.com/showthread.php?t=48255 to set it to something you can remember a little easier.

I would suggest to also backup:

    files (directory)
    license
    logs (directory)
    query_ip_whitelist.txt
    ts3server.ini
ts3server.sqlitedb (as mentioned earlier this is the most important file)

LICENSE is a file, not a directory.
Besides the database (no whether if SQLite or MySQL) you should backup the files (normally the internals like avatars and icons should suffice), your licencekey and the *.ini files.

should the server shut down before the backup or can you just copy the file at any time?

you can copy the file any time, may want to shut server down when applying the copied file tho.

So if I am on a unmanaged VDS using CentoOS 6 running teamspeak 3 using a mysql database simply copying the entire teamspeak installation folder will backup everything I need to restore my server?

    I just backup the following:
    • The files directory
    • licensekey.dat
    • query_ip_blacklist.txt
    • query_ip_whitelist.txt
    • serverkey.dat
    • ts3server.ini
    • ts3server.sqlitedb
    • ts3server_win64.exe

It seems to work just fine after that. Of course... you could always just backup the entire ts3server directory to a USB drive or something. Then you just drop it where you want it and run it as usual. But the above files are all I ever backup, especially the files directory.

Let me know if this helps and how it goes for you.
