I was told today from someone on TeamSpeak that they are able to see any/all servers that I have previously/currently am on.
Is this actually possible?

Nobody knows all servers you have been on before.*
*Except the admins from these servers and/or the users who have seen you there.

Probably he meant a TS-Viewer like tsviewer.com or on the clans/guild/organisation website.
Yes. With his comment I thought the same.
Dante has answered thinking in the tools that the TS3 server offers to the admins.
And this admin was probably talking about webservices that act as tree-viewer of the servers that owners or admins or equivalent have suscribed to them. For example, tsviewer.com. These services show the channel tree with the current users and allow to search for users in all the servers suscribed but they show the last connection in a week or so.
