How do I make a server address so it isn't my ip address?

Just set up a DNS A record for your IP and preferably you'll add an DNS SRV record to the zone. With the DNS SRV record the client can get additional information like the voice port the server is running on.

They way you insert the A and SRV record into your DNS zone depends on the way you like or have access to. You might want to edit the zone file directly or use the web interface of your dns provider.

Of course you'll need an static IP for this. If you have a dynamic IP you'll need a DNS provider who allows dynamic updates on A record. There are quite a number out there in the wild. In this case you might want to stress goolge searching for "dynamic dns" or "ddns".
